Peanut Butter Protein Cookies

Ingredients:

½ cup peanut butter (I used no sugar added peanut butter, for less sugar)

⅓ cup brown sugar

2 T Gluten Free flour (I used Bob’s Red Mill 1 to 1 Gluten Free Baking Flour)

1 scoop Designer Wellness Designer Egg Protein Powder

1 egg

¼ t vanilla extract


Directions:

  1. Preheat oven to 350 degrees. Prepare a baking sheet with parchment paper.

  2. In a mixing bowl, add peanut butter, brown sugar, gluten free four, Designer Wellness Designer Whey Protein Powder, egg, and vanilla extract.

  3. Using a rubber spatula, gently stir and combine all ingredients.

  4. Mix with spatula until smooth, for at least one minute to make sure the mixture is fully combined. A soft dough will form.

  5. Using a spoon, divide dough into 4 servings. Gently use your hands to form each serving into a smooth ball and place on the prepared baking sheet.

  6. When all four servings are on the sheet, use a fork to press down each ball, creating a criss cross (see photos).**

  7. Bake for 12 minutes.

  8. Let cookies cool and enjoy!



**If the dough is sticky, use nonstick spray or flour on the back of your fork to make pressing the balls down easier.
