Almond Joy Oatmeal Bars

Bars that are quick and easy to whip up for an after school snack recipe or bite between meals! Completely guilt free, high protein and no baking required!

Servings 15 servings

Ingredients

Base:
¼ c Coconut oil melted
¼ c Maple syrup, pure
¼ c Cashew butter**, creamy
1 c Coconut, shredded and unsweetened
1 c Oats, rolled or old fashion
45 G Designer Protein French Vanilla Whey Powder

Coating:
1/4 c Chocolate, melted
Coconut, shredded and unsweetened

Instructions

In a large bowl whisk together coconut oil, maple syrup, cashew butter and salt until smooth.
Stir in shredded coconut, whey and oats until thoroughly combined.
Spray a 9 x 5 inch loaf pan.
Add the base mixture to the pan.
Using a spatula, press until mixture down until condensed.
In a small bowl whisk together chocolate topping ingredients.
Pour chocolate topping over base and sprinkle with extra coconut!
Freeze bars for at least 1 hour!

Notes

Feel free to substitute honey or agave nectar in place of the pure maple syrup.

** Creamy peanut butter can also be used, or melted down almond butter
