1 1/4 cups almond milk
1 tbsp apple cider vinegar
2 tbsp sugar
1 1/4 cups flour
1-2 scoops protein powder
1/2 tsp vanilla
1 tsp baking powder
3/4 tsp baking soda
2 tbsp melted vegan butter
1/2 cup mix-ins of choice
Whisk together your milk and vinegar. Let sit for 5 minutes. Add in the rest of the ingredients except the mix ins and stir until a batter forms. Toss in blueberries or mix ins of choice. Let rest for a few minutes then pour circular pancakes (4” diameter) on a greased skillet on medium heat and cook for around 3 minutes each side. Stack em high and enjoy!
