Protein Packed Breakfast Cookies

Wet ingredients: 5 oz unsweetened applesauce
½ cup coconut oil, melted
3 oz PBFit powdered peanut butter, mixed with water until smooth
½ cup maple syrup
1 t vanilla

 

Dry ingredients: 4 scoops Designer Wellness Vanilla Egg Protein Powder
5 oz flour
1 t baking soda
1 t baking powder
1 t cinnamon
6 oz rolled oats
½ cup shredded coconut
¼ cup shelled sunflower seeds
⅓ cup pepitas
⅓ cup dried currants or cranberries
⅓ cup chopped walnuts
½ cup chocolate chips

 

Preheat oven to 370 degrees. Measure all the dry ingredients into a mixing bowl. In a large mixing bowl, combine all the wet ingredients and mix until smooth. Add the dry ingredients to the wet ingredients and mix well until combined. On a cookie sheet with parchment paper, scoop cookie dough (each cookie should be about 4T). Press down the cookies and leave 2 inches between each cookie--Note that these cookies do not spread much. Bake cookies for 15 minutes, turning the pan half way through. Let cool and enjoy!
