Pink Velvet Cookie Dough Cheesecake

Cookie dough base:

6 oz dairy-free Cream Cheese
4 oz non-dairy butter
3/4 cup sugar
1 tsp vanilla
1/4 tsp salt
1 1/2 cups all purpose flour
Chocolate chips

Cheesecake layer:
16 ounces dairy-free cream cheese
1 Tub dairy-free whipped cream
1/4 cup @designerwellness collagen
1/4 cup powdered sugar
1 tsp vanilla extract
1 - 2 tbsp almond milk
6-8 drops red food dye

Optional dairy free whipped cream for topping!

First, make your cookie dough base by beating together the cookie dough ingredients. Press into the bottom of a parchment lined round cheesecake pan. Now, make your cheesecake filling by beating together those ingredients until fluffy and smooth (add just enough food dye to make it pink, not red!). Pour oven the cookie dough base then freeze for 3 hours, top with whipped cream & dairy-free cookies and serve!
