1 cup mashed banana

1 cup pumpkin puree (you can make your own or store bought)

½ cup pure maple syrup

1/2 cup sugar

2 eggs

1/4 cup coconut oil, melted and cooled

1 teaspoon vanilla extract
Dry ingredients:

1 cup oat flour
-
1 cup whole wheat flour

1 tablespoon pumpkin pie spice

1 teaspoon baking soda
-
¼ teaspoon salt
-
1/2 cup walnuts
-
Optional: chocolate chips
Frosting:

4 ounces cream cheese, softened
-
2 tablespoons butter, melted
-
1/2 cup powdered sugar
-
1 teaspoon vanilla extract
-
¼ teaspoon cinnamon
-
1-2 teaspoons almond milk
Directions:
1. Preheat the oven to 350 degrees F. Use a nonstick spray (coconut or butter) to coat a bread dish. Don't skip this step as his will ensure the bread does not stick!
2. Mix together the wet ingredients: pumpkin puree, pure maple syrup, eggs, butter and vanilla extract. Mix until well combined.
3. Mix in dry ingredients: Add oat flour, whole wheat flour, pumpkin pie spice, baking soda and salt to the bowl with the wet ingredients. Mix with a wooden spoon until just combined. Fold in nuts and chocolate chips, if desired.
4. Bake for 50-55 minutes or until a toothpick inserted into the middle comes out clean.
5. Make the cinnamon cream cheese frosting: Add cream cheese, butter, powdered sugar, vanilla, cinnamon and milk. Whisk together until smooth. Spread over the muffins. Sprinkle your choice of toppings on top: nuts, cinnamon, chocolate chips! ENJOY!
