Good Morning Protein Biscotti (GF)

¾ cup GF Flour (I use Bob's Red Mill Gluten Free 1-to-1 Baking Flour)

⅓ c sugar substitute (I use Truvia Cane Sugar Blend)

½ t baking soda

½ t salt

2 scoops Vanilla Designer Whey 100% Whey Protein Powder ®

3 egg whites

4 T light butter, melted

⅓ cup dark chocolate chips

Optional: add your favorite berries and/or chopped nuts.


Directions:

  1. Preheat oven to 375 degrees. Prepare a baking sheet with parchment paper or coat with nonstick baking spray.

  1. Combine GF flour, sugar substituted, baking soda, salt, and protein powder in a medium size bowl. Stir to combine.

  2. Add egg whites and melted butter to dry ingredients. Stir well until a thick dough forms.

  3. Put dough into the baking sheet and form a thick log, ideally 8 by 6 inches.

  4. Bake for 18-20 minutes, or until light golden brown.

  5. Cool for 15 minutes, then transfer to a cooling rack. Let cool completely, at least 30 minutes.

  6. Using a knife, slice dough from the shorter end, into 8 even pieces. Arrange face down on the baking sheet.

  7. Bake for 10 minutes. Pull the baking sheet out and flip each biscotti.

  8. Bake for another 10-15 minutes, until golden brown.

  9. Let cool and enjoy with your favorite coffee or tea!
