Protein Lemon Bars

Servings: 9 bars

Ingredients:

Crust:

5 full graham cracker rectangles, food processed into crumbs

1 T sugar or sugar substitute

3 T light butter, melted

Filling:

6 oz cream cheese, room temperature and softened

¾ cup nonfat greek yogurt

3 eggs

⅓ cup sugar or sugar substitute

2 scoops Designer Wellness Designer Egg Protein Powder, Classic Vanilla

⅓ cup lemon juice

1 T lemon zest

1 t vanilla

Directions:

  1. Preheat oven to 350 degrees.

  2. Prepare a glass baking dish with nonstick spray and parchment paper. I used a 7.25'' wide x 5.5' glass dish.

  3. In a small bowl, combine graham cracker crumbs, sugar, and melted butter until combined and has a sandy texture.

  4. Pour mixture into prepared baking dish and press evenly into the bottom.

  5. Bake for 8 minutes. Remove and let cool while preparing lemon bar filling.

  6. In a medium mixing bowl with a paddle attachment, mix cream cheese on medium speed for 2 minutes until smooth.

  7. Add greek yogurt and mix until smooth and combined.

  8. Add eggs, lemon juice, lemon zest, and vanilla. Mix on low until combined and smooth.

  9. Add sugar and protein powder, mixing on low until smooth.

  10. Pour mixture over baked crust. Bake for 20-25 minutes, or until the lemon bar filling is fully set.

  11. Cool for at least 30 minutes, then refrigerate for at least 3 hours, preferably overnight, before serving.

  12. Cut into bars and enjoy chilled!
