Candy Cane Cookies (100% Vegan Option)
You’ll need:
8 tbsp vegan butter
1 cup raw cane sugar
1 tbsp corn starch + 3 tbsp water (stir and set for 3 minutes)
1 tsp vanilla
1 cup flour
1 scoop Designer Lite Vanilla Cupcake or Designer Plant- Vanilla ( Vegan)
1/2 tsp baking soda
1/2 tsp baking powder
1/2 cup chopped peppermint chocolates
Beat together butter and sugar until fluffy. Add egg replacement and vanilla and mix until smooth. Then add all dry ingredients except the chocolates and stir into dough. Next stir in chocolates of choice then scoop 1 ounce balls onto parchment lined baking sheet. Bake at 350°F for 10 minutes - then press another peppermint chocolate into the cookie for a pretty decoration! Enjoy
