1 ½ cups quinoa, uncooked
1 cup chocolate chips
1 cup peanut butter
2 T coconut oil
6 scoops Designer Wellness Chocolate Protein Powder
Prepare a 8x8 baking pan with nonstick spray or line with wax paper. Toast the uncooked quinoa in a pan over medium heat for 4-5 minutes, until quinoa is slightly browned; set aside. In a microwave safe bowl, heat the chocolate chips and coconut oil for 60-90 seconds; take out and stir until chips are melted and smooth. Add the peanut butter and microwave for 30 seconds, stirring until smooth. Add the protein powder; mix until combined. Quickly add the toasted quinoa and mix well. Pour mixture into a pan and refrigerate for at least 3 hours. Cut into bars and enjoy!
