Ingredients:
⅓ cup oat flour
2 T cocoa powder
¼ cup pistachios, chopped
¼ cup pistachio butter
¼ cup honey or maple syrup (lite low calorie)
2 scoops VANILLA DESIGNER WHEY: 100% WHEY PROTEIN POWDER- DESIGNER PROTEIN ®
½ cup dark chocolate chips
1 T coconut oil
Directions:
- Combine oat flour, cocoa powder, pistachios, pistachio butter, honey or maple syrup, and protein powder in a large mixing bowl. Using your hands or a spatula, mix thoroughly until a soft dough forms.
- Divide into 6 equal portions, rolling into 6 balls. Refrigerate for at least one hour
- In a microwave-safe bowl, add the dark chocolate chips and coconut oil. Microwave for 1 minute at 50% power. Stir until smooth.
- Using a toothpick, dip each ball and coat in chocolate.
- Sprinkle with chopped pistachios.
- Let chocolate set. Serve and enjoy!
