Hemp Seed Protein Bars

1 cup of pitted dates, soaked in warm water for at least 1 hour and drained
½ cup peanut butter (or any nut butter)
2 scoops Designer Wellness Vanilla OR Chocolate Protein Powder
¼ cup powdered peanut butter
1 ½ cups hemp seeds
2 T chia seeds
2 T coconut oil, melted, divided
⅓ cup dark chocolate chips


In a food processor, pulse dates, peanut butter, powdered peanut butter, and 1 T melted coconut oil until smooth and combined. Scrape mixture into a mixing bowl; add protein powder, hemp seeds, and chia seeds; mix until smooth and completely combined. Line a bread pan or small baking dish with wax paper and evenly spread the mixture in the pan. In a microwave safe bowl, add 1 T coconut oil and dark chocolate chips; microwave for 90 seconds at 50% power; stir until smooth. Pour chocolate over the bars and spread evenly. Refrigerate bars for at least 4 hours, then cut into 8 squares and enjoy!
