Oatmeal Cookie Cheesecake Bars

Not your grandmother’s oatmeal cookies- BETTER! High protein, highly satisfying crumble bars with your favorite oatmeal cookie taste. Layers of crumble, crunchy love with a creamy high protein goodness in the middle!

Crust/Crumble:
1 c Nut butter
1/2 c Date Syrup, or maple syrup or honey
2 c Rolled Oats
1/4 c Flour, gluten free
1 tsp Cinnamon

Cheesecake Filling:
1 c Yogurt, of choice
60g Designer Protein Plant Protein, Vanilla

Lightly spray an 8x8 baking dish,
In a large mixing bowl, mix the nut butter and syrup until well combined.
Mix in the oats, flour and cinnamon until everything comes together.
Let the batter sit for a few minutes to thicken.
While the batter sits, prepare the filling by combining together yogurt and protein.
Tightly press 2/3 of the crust in the bottom of the sprayed pan.
Put the filling over the bottom layer and freeze for 15 minutes until thickened but not fully frozen.
Take out and crumble the remaining 1/3 of the mixture over the filling.
Lightly press down then freeze for 30 minutes longer or until firm.
