1/2 cup vegan butter
1/4 cup granulated sugar of choice
1/2 cup brown sugar
1 cornstarch egg (1 tbsp corn starch + 3-4 tbsp almond milk)
1 tsp vanilla extract
1 tsp peppermint extract
3/4 cup AP flour (use 1 cup if not using protein)
1 scoop protein powder 
1/2 cup cocoa powder
1 tsp baking soda
1 tbsp instant coffee
Dash of salt

My regular vegan buttercream + 1/2 tsp peppermint extract

Cream together butter, sugar, cornstarch egg, and extracts. Softly stir in all dry ingredients to form your cookie dough. Chill dough for at least 30 minutes - this helps flavor develop. Use a 1.5 oz scoop (if you only have a 1 oz scoop just bake for less time) to scoop out dough balls and bake at 350°F for 12 minutes. Once cookies have cooled, fill with peppermint buttercream and decorate to your heart’s desire!❤️
